Raw Vegan Zucchini Pasta with Creamy Avocado and Tomato Sauce | Elegant, Fun, Simple, and Easy!

This pasta is not only healthy and delicious but also perfect for warm days. Incorporating raw veggies into your lifestyle can truly enhance your beauty from the inside out. What you will need (Tools):
To make today’s recipe, you will need a spiralizer. I recently got this hand spiralizer, which you can also find on Amazon. It is very easy to use and so fun, I highly recommend it.
If you don’t have a spiralizer, don’t worry! You can also use a peeler, and I’ve demonstrated how to do it on here. The shape might be a little different from this pasta, but it’s very creative and fun!
To make the pasta sauces, you’ll need a blender. I haven’t tried it yet but the food processer might work too.
To mix the pasta and sauce, please prepare a large bowl.
What you will need (Ingredients):
For the pasta, you’ll need 1 large zucchini. In today’s recipe, I’m making two kinds of sauce, so I’m using 2 large zucchinis. Even one zucchini will give you a big and very satisfying amount.
For the avocado sauce, you will need:
- 1 avocado
- Juice of lemon
- 1 tablespoon of dried basil (If you have fresh basil, it’s perfect! Please prepare a handful of basil).
- Pinch of salt & pepper
- Some leftover zucchini that didn’t get spiralized
- Some water (Depends on your favourite thickness)
That’s it! We keep it very easy and simple. If you love, you can also add anything such as onion powder, garlic powder, celery, or cilantro for extra texture and flavor.
For the tomato sauce, you’ll need:
- 1 large tomato
- Some cherry tomatoes
- Some sun-dried tomatoes (It’s not going to be fully raw but you can also make homemade one from here!)
- 1 tbsp dried basil or a handful of fresh basil
- A little salt & pepper
Again, you can add more herbs, onions, celery, or cilantro for additional texture and flavor as you like.

Making the Pasta:
First, let’s prepare the zucchini pasta. Cut off both ends of zucchini and start spiralizing. This process is so much fun!
If you’re using a peeler, make sure to peel the zucchini while turning it continuously. This helps create longer, pasta-like shapes.
After your zucchini pasta is ready, let’s move on to beautiful sauces!
Making the Sauces:
Next, let’s make the avocado sauce. Simply put all the ingredients in your blender. If the texture is too thick to blend, you can add water little by little until you get the consistency you like.
For the tomato sauce, repeat the process: put all the ingredients into your blender and blend until smooth.
Presentation and Serving:
Once your sauces are ready, put the pasta and sauce into the large bowl. You can use your clean hands or spoons to mix everything together.
For a beautiful and elegant presentation, you can decorate with extra herbs and tomatoes. You can also add some edible flowers. Let your imagination and creativity shine bright!
